The offensive flavour of boar taint (BT) is primarily caused by the accumulation of skatole and androstenone in the noncastrated male pigs (Drag et al. 2017). Surgical castration is an effective solution but results in reduced leaner carcass values and increased urinary nitrogen, in addition to animal welfare concerns (European Commission, 2010)
