Electrohydrodynamic encapsulation of probiotics: A review
Functional nano-microfibers and capsules developed using electrohydrodynamic (EHD) processing methods for the encapsulation of probiotics are reviewed. The properties of the polysaccharides, proteins, or hybrids compounds utilized for probiotics encapsulation, and the characteristics of the tailor-made matrices by EHD, facilitate high encapsulation and long-term viability of cells.
The ability of the electrospun fibers and electrosprayed capsules to incorporate other functional compounds (e.g. prebiotics), and their effectiveness to promote the targeted delivery and the survival of the encapsulated probiotics cells under gastrointestinal track conditions, are also discussed.
