Functional phospholipid nano-microfibers and nano-microparticles developed using electrohydrodynamic processing methods are reviewed. Depending on the phospholipid concentration the solvent used and the processing conditions, fibers and particles with a range of morphologies, mechanical properties and functionalities were observed.

The efficacy of electrospun phospholipid fibers as antioxidant, encapsulation, and delivery matrices for bioactive compounds is also presented.
